Egg-less chocolate cake

This came out so delicious, we ate it warm - slightly crunchy on the outside, soft in the middle!


Ingredients:

125 grams gluten free sr flour
2 tbsp cocoa powder
1/2 tsp xantham gum

200mls  condensed milk
60 mls melted butter

 

Method:

In a bowl mix the dry ingredients and then stir in the melted butter and milk until its a smooth consistency.

Pour into an 8 inch cake tin and bake at 170 dc for 25 - 30 mins, its ready when the cake comes apart from the sides and springs back in the middle.

Tuile biscuits


Tuile biscuits can be shaped if you want when still hot, a bit like brandysnaps , so you can roll them up into cigars or even make ice cream cones

3oz gf flour
3 and1/2 oz sugar
2 egg whites
mix up and spread a teaspoonful into desired shape on baking sheet n cook @170C 10 mins

Best ever pastry recipe

This pastry is the best i've made so far and it doesnt fall apart - yippee!

ingredients:
8oz (225g) gluten free flour mix
4oz (110g) butter or gf marg
2 eggs yolks
cold water to bind
method:
whizz up flour and butter in a food processor, add yolks and whizz then add enough cold water to bind together
Squash the dough up roughly into a ball and leave to rest in a poly bag or covered bowl 1/2 hour
Use for sausage rolls and pies
best rolled out between 2 sheets cling film or silicone sheets
Cook at 170C till crisp and brown

NB use the egg whites to make Tuile biscuits!

Smash Pizza


Great quick meal for when I havent got any shop bought pizza bases in or just for something different.

Recipe

5 large tablespoons of smash, hot water and toppings of your choice

Put the smash into a bowl and add hot water, a little at a time until it forms a dough like consistency.
Pat the dough out into a round disc and bake for 15 minutes at 200 dc, flipping half way through.
Add passata or ketchup (Heinz) and top with strips of meat, cheese and/or grated vegetables.
This one is chicken and grated courgette.

Smash dippers


These are so quick to make and can be used for dipping with hummus etc or topped with things like salsa.

Recipe

Put 4 tablespoons of smash into a bowl and add a little bit of hot water at a time until a dough consistency is achieved.

Roll into little balls then flatten out into a disc.

Fry, or oven bake as i've done here for 15 minutes at 200 dc

Mini quiches





Too delish! We loved these - the 'base' is made from two slices of gf bread.

Recipe:

Use a rolling pin to flatten slices of gf bread (i've used Genius brown here)

Spray a muffin tin with a little oil and line them with the bread, pushing in so there aren't any holes. (use more bread to fill holes if the bread breaks up)

Fill them with your choice of egg mix.  Here i've used 2 eggs whisked up with ham and courgette.

Bake at 200 dc for 20 minutes or until egg has set
